Food Hygiene Training
All food handlers need to be adequately trained to ensure safe handling and hygienic handling of food.
It is recommended that food handlers undertake Level 2 Food Safety in Catering or equivalent training as a minimum, along with job and site-specific training carried out in house.
Managers and supervisors are recommended to undertake Level 3 Food Safety in Catering or equivalent training.
Anyone involved in the development or maintenance of hazard analysis and critical control point (HACCP) plans are also required to receive adequate training in the application of HACCP principles.

The Food Standards Agency offers free online food safety courses available to help you and your business comply with food hygiene and food standards. The e-learning courses include:

FSA online coaching videos
The Food Standards Agency has published 10 short videos to help caterers produce food safely. Each video is about a minute long and covers specific food hygiene practices such as:
- effective hand washing
- chilling foods down as quickly as possible
- checking that foods are cooked thoroughly
- effective cleaning
- what to do if a member of staff is ill at work
- keeping pests out of your business, what to look for and the action to take.
